Making this premium handcrafted Banana Brandy (rakia, raki, rakija, бананова ракия) is a real challenge (bananas are rich in potassium and have high PH levels). We follow a thousand year old South European process ( AKA rakia, ракия, distillation) that brings out the distinctive fruit flavor.
Truly unique brandy for the real connoisseur. Small batch - only 250 bottles have been made in 2015.
Banana Brandy - we handpick, peel and crush the best ripe banana fruits and blend them into juice. We then add a classic Champagne yeast strain which produces almost no volatiles and preserves the natural aroma and flavors of the bananas. It takes between 10 and 14 days for the fermentation to complete, after which the fragrant wine is distilled through a four plate copper column still that together with the white American oak give this brandy its unique taste.
