Banana Eau de Vie - we handpick, peel and crush the best ripe banana fruits and blend them into juice. We then add a classic Champagne yeast strain which produces almost no volatiles and preserves the natural aroma and flavors of the bananas. It takes between 10 and 14 days for the fermentation to complete, after which the fragrant wine is distilled through a four plate copper column still that gives this Eau de Vie its unique fruit taste.
